Nets under the trees serve as a cushion so olives do not get bruised. Bruised olives result in inferior olive oil and taint flavor and aroma. Difficult to reach olives are hand picked. A mechanical rake shakes the olives from the tree while they fall on the nets. Using the rake is an art form. The rake must gently shake branches so minimal breakage occurs. Harvest Description
Young trees require more finesse when using the rake. Locals say one has to use the rake like a comb, gently getting each strand. Nets are pulled from under the trees. Olives, small branches and leaves are ready for transport to the pressing plant. Sacks of olives at the plant lined up for pressing. Each batch represents a nearby estate. In less than twenty-four hours they will all be pressed. It is imperative to press the olives as soon as possible; delayed pressing will result in inferior olive oil.
